One-Tray Oven Dinners - Lamb Cutlets!

Spicy Cumin Lamb Cutlets!



This dish is inspired by my favourite Northern Chinese style grilled lamb skewers! This modified version is my simple one-tray oven baked meal that is my go to for weeknight dinners. 

So let the oven do the work and serve up this spicy lamb cutlets tonight! Forget the line up of pots and pans because one pan equals less washing up!

INGREDIENTS: 

  • 12 x Lamb Cutlets (approx. 100g each piece) 
  • 1/4 Cut Kent Pumpkin, sliced 1 inch thick
  • 1 x Cup Frozen Peas 
  • Optional: 1 x Small Packet Baby Spinach Leaves
Dry Spice Rub:
  • 3-4 Tbs cumin powder 
  • 1 Tbs Red Chilli Flakes
  • 1 Tbs sweet paprika
  • 1 tsp salt

STEPS:

  1. Preheat oven to 180ºC line oven tray with baking paper and set aside. 
  2. In a large bowl, add spices, lamb and toss to combine ensuring it evenly coats the pieces. 
  3. Arrange the pumpkin flat on the lined tray followed by lamb cutlets on top. Cook for 30 mins, by this stage the pumpkin and lamb would have released its juices.
  4. Remove tray from oven, add peas letting it fall into the pockets into the juices between the lamb & pumpkin. Turn up heat to 200ºC and cook for a further 5 mins, until meat is caramelised. 
  5. Serve the lamb, pumpkin, peas with fresh baby spinach and drizzle with the pan juices over the top. 
  6. Enjoy!


LisaDiepCooks Notes: 

  • Spices: The combination of the cumin and chilli gets the taste buds going! However if kids can't handle chilli you can leave it out.
  • Lamb: Score lamb skin/fat or cut off. Don’t clean/french the bone the meat on the bone is the best bit! No cutlets? Use chops or forequarter instead, I usually go off what’s on special at the supermarket that week. 
  • How it’s cooked: Lamb will be medium to well (approx. 100g size pieces) I like it this way as the fat renders off. Cook for shorter period time if you prefer more rare or if the cutlets are smaller. NB: you’ll need to cut pumpkin thinner to account for the revised cooking time.
  • Tray: I use this Kitchen Aid Tray : 25 x 38 x 2.5cm. It’s a good size for my oven and easy to clean. However I do I line the trays with baking paper or foil sometimes to save up on washing up!
