Quick Vietnamese Tomato Rice w/ Fried Egg






Jazz up your jasmine rice with my Quick Vietnamese Tomato Rice w/ Fried Egg Recipe! 

One of the top request I get for recipes is how to make this tomato rice, similar to what you’d get at your local Vietnamese joint usually served with a pork chop, beef cubes or crispy skin chicken! 

It’s so easy to make and gives the average boiled rice a bit of oomph!

I like to eat it with a fried egg for a quick no fuss meal. It literally can be eaten for breakie, lunch or dinner!

Ingredients

  • 1 cup jasmine rice, rinsed in cold water 
  • 1 1/2 cups water
  • 2 Tbs tomato sauce or ketchup (Optional - Plus an additional 1 Tbs reserved for the end) 
  • 1 tsp soy sauce
  • 1 tsp olive oil 
  •  

Method:
 

Absorption Method (if you don't have a rice cooker)
  1. Place all ingredients in a saucepan and mix together with a spoon ensuring sauce has properly dissolved into the water
  2. On high heat on the stove bring rice to boil, then reduce heat to low and simmer covered with a lid for 15 mins 
  3. Remove from heat and let stand for 5 mins
  4. Optional - Take reserved tomato sauce and using a fork mix into the rice  
  5. Serve with a fried egg cooked to your liking, garnish with coriander, chilli oil & soy sauce 
  6. Enjoy!

Cooks Notes:

  • If you are making more rice then time will need to be increased by a few minutes. You know it’s ready when you lift the lid and there are holes on surface. Water to rice ratio 1:1.5
  • Optional last step adding additional tomato sauce : this is just to give it a fresh boost of colour 🍅
