Quick Vietnamese Tomato Rice w/ Fried Egg
Ingredients
- 1 cup jasmine rice, rinsed in cold water
- 1 1/2 cups water
- 2 Tbs tomato sauce or ketchup (Optional - Plus an additional 1 Tbs reserved for the end)
- 1 tsp soy sauce
- 1 tsp olive oil
Method:
Absorption Method (if you don't have a rice cooker)
- Place all ingredients in a saucepan and mix together with a spoon ensuring sauce has properly dissolved into the water
- On high heat on the stove bring rice to boil, then reduce heat to low and simmer covered with a lid for 15 mins
- Remove from heat and let stand for 5 mins
- Optional - Take reserved tomato sauce and using a fork mix into the rice
- Serve with a fried egg cooked to your liking, garnish with coriander, chilli oil & soy sauce
- Enjoy!
