Serves/makes: 3/4 cup
INGREDIENTS:
- 1/4 cup water
- 1/4 cup rice vinegar
- 1/4 cup white sugar
- 1 Tbs fresh red chilli, finely chopped
- 1 x clove garlic, finely chopped/crushed
- 1/2 - 1 Tbs corn/potato starch/flour + 1-2 Tbs water, mixed together to make a slurry
STEPS:
- In a small saucepan, add water, rice vinegar, sugar, chilli and bring to a gentle boil, 2 mins. Stirring occasionally.
- Turn down heat to low and quickly stir in the starch slurry until the sauce thickens and turns clear.
- Remove from stove and allow to cool before serving. Store in a glass jar and keep in the fridge.

LisaDiepCooks Notes:
- Slurry: start off with 1/2 Tbs initially and gradually add more if you prefer the sauce to be thicker. If it ends up being too thick you can thin it out with a touch of water.
- Shelf life: pop into a sealed glass container and store in the fridge for 1 week.
- Take it to the next level: Stir in 1 tsp of Sriracha to give it an extra kick and pop of red colour.
