Turmeric, Fish Sauce, Lemongrass & Chilli Lamb 

(aka thịt cừu nghệ)

Prep Time: 5 + 30 marinade time 
Cook Time: 1 hour 15 mins
Difficulty: Easy 
Serves: 4

INGREDIENTS:

4 x Lamb Forequarter Chops (cut in half) 

Marinade:
  • 2 x Tbs Fish Sauce
  • 2 x Tbs Lemongrass, white part (minced/processed) 
  • 1 x Tbs Turmeric powder
  • 1 x tsp sweet paprika 
  • 1-2 x Birdseye chilli, sliced 
  • 1/2 x tsp white sugar
Serve with: Rice, roast veges or Salad 
Garnish: Fresh coriander & Chilli 



STEPS:


  1. Preheat oven to 180 degrees Celsius fan forced. 
  2. In a small bowl, mix marinade ingredients until evenly incorporated. Brush all over the lamb pieces and set aside to marinade for 30 mins. NB: or overnight if making ahead. 
  3. On an oven proof tray/dish, spread out lamb  and bake for 1 hour 15 mins until meat is caramelised, fat rendered and meat comes off the bone easily. 
  4. Serve with your choice of sides & garnish. 
  5. Enjoy!

  • While this dish takes a bit of time in the oven it’s super easy because you can make ahead, pop in the oven when ready to cook and just leave. No fussing around with flipping or checking up on it. 
  • Cooking for a large group? Easy - just double or triple the recipe! 
  • Marinade is also great for chicken!
