Roasted Chicken Thighs




One-tray bakes meals is my go to especially on a weeknight. Especially when you don't have time to slave over the stove. This recipe is a simple 4 ingredient marinade that you’ll have in your pantry.  You really can't go wrong with chicken thighs its very forgiving.

INGREDIENTS:


Chicken:
  • 10 x Chicken Thighs skin on, bone in, washed and patted dry. (NB: I used free range total 2kg) 

Marinade:
  • 1/2 x Cup Fish Sauce
  • 1/4 x Cup white sugar
  • 1 x Bulb fresh garlic, crushed/minced 
  • 1 x Tbs sweet paprika 
  • Salt and pepper to finish 
Serving suggestions: serve with rice & your favourite herbs and vegetables 

STEPS:


  1. Preheat oven to 180 °C, line a oven tray with baking paper or foil and set aside. 
  2. In a large mixing bowl add marinade ingredients stirring well to combine. Mix in chicken and leave to marinade for 15 mins. 
  3. Lay chicken on tray, and bake for 45 mins, then turn oven up to 200°C and cook for further 10-15 minutes until golden. 
  4. Enjoy! 



      LisaDiepCooks Notes:

      • Chicken: I prefer free range, note pieces are smaller than regular chicken, so use less if pieces are large. You can substitute for chicken merryland or boneless thighs (if so reduce cooking time by about 10 mins) 
      • Marinade: only needs 15 minutes, you can make ahead and leave overnight in fridge. 
      • Leftovers: great the next day! The batch I made was enough for 2 dinners!
